What the heck is gluten?

Why is it such a big deal?

Is it the cause of my sickness?

If you have questions like this, don’t worry you are not alone. Many of us have family members that may be diagnosed with Gluten Sensitivity or Celiac Disease.

Well, if you have never heard of it.

Gluten is a protein that is naturally found in wheat, barley and rye it’s a compound that actually helps that bread hold together well.

Celiac Disease is when your immune system fires up and attacks gluten when it's present. This triggers autoimmune responses throughout your body, most dramatically your gut. Some of the symptoms are brain fog, depression, ADHD, abdominal pain, diarrhea, nausea, heartburn, fatigue, delayed puberty, lactose intolerance, and itching.

Gluten Sensitivity is an intolerance to gluten or “mal-processed gluten”
that results in “guess what?”

So, you may ask, “what the heck happened?”

Wheat, Rye and Barley were notoriously difficult to manufacture before the 19th century. As transportation improved, so did the access and resource for harvesting wheat, barley, and rye.

Once the Great Depression and World War II came around there was a significant emphasize on buying, storing and using non-perishable foods as opposed to meats, vegetables and dairy. Non-perishable foods where cheaper and had a longer shelf life. This began the United States’ love affair with “Kraft and Cream of Wheat”

By the 1990s the U.S.A posted its first “Food Pyramid” in every school, dinner and office. Wheats where touted as a health food for the wrong reasons.
In the next 150 year we would see the rise if Celiac Disease, Gluten Sensitivity, Autism Spectrum, Autoimmunity, Diabetes and Cardiovascular Disease.

This overemphasis led to mass production!

As any mass-producing product goes, will come the need for augmentation.

This made it imperative to find new ways to manufacture wheat, for longer shelf life, larger production yields and better cost.

In the last 150 years wheat, barley rye have been over-saturated with many different CONVENIENCE substances, including gluten. In fact, our wheat, rye and barley bare little compositional resemblance to the wheat, rye and barley of the late 18th and early 19th century.
